  • 1 large whole wheat tortilla
  • Spread of choice (peanut butter, cream cheese, nutella, etc.)
  • 1 small banana, thinly sliced
  • Cinnamon
  • Steps

  • Heat a large skillet over medium heat. While it heats, spread the peanut butter or whatever you choose to use over the tortilla. Place the banana slices over half of it and sprinkle cinnamon over the top. Fold the tortilla in half and toast it in the skillet until it begins to brown, then flip it and toast the other side. Then, remove it from the skillet and slice it in half and that’s it.

  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 cup sour cream
  • 1 bag shredded cheddar cheese

  • Preheat oven to 450°. Place frozen potatoes o’Brien in casserole baking dish. Pour shredded cheese on top. Change

  • Keto Buttermilk Pancakes

    Ingredients

  • 1/3 cup coconut flour
  • 1 tbs Erythritol
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp xanthan gum
  • 1/2 cup buttermilk
  • 1 egg
  • 2 tbs sour cream
  • 1 tbs melted unsalted butter
  • Steps

  • Combine dry ingredients together (coconut flour down to the xanthan gum)
  • Combine wet ingredients in a separate bowl (buttermilk down to the melted butter).
  • Mix dry ingredients with wet ingredients.
  • Do not over mix. I repeat, do not over mix. The mixture will be thick, but this makes about 4-5 portion sized pancakes.
  • Takes a bit longer to cook, but that’s ok.
  • Heat a little butter in pan and spoon (I used a tablespoon) into pan. Flip when firm at bottom.
  • I topped with a little butter and no syrup. One small pancake was enough for me as these are pretty thick, filling and tasty.

  • Left over Ham sliced, or cubed
  • 2 (9 inch) tortillas
  • 1/4 cup Shredded cheese
  • Jalapenos
  • Salsa
  • Sour cream
  • Taco sauce
  • Optional (add inside or on top)
  • Jalapeno cheddar liquid cheese
  • Onion
  • Tomatoes
  • Guacamole
  • Etc

  • Using a medium size pan, lay one tortilla in the pan. Place the slices of ham on top and jalapenos. Sprinkle with cheese and add another tortilla on top.
  • Allow to cook on medium heat about 3 minutes or until the bottom tortilla gets golden brown.
  • Flip and brown the second side for about 3 minutes or until golden brown and cheese is melted on the inside.
  • Remove from pan and cut. Top with sour cream, salsa and hot sauce. Enjoy.

  • 400 g flour wholegrain
  • 280 g sugar coarse+brown
  • 2 tsp bkg pwd
  • 1 tsp salt
  • 2 tbsp flax meal
  • 6 tbsp hot water
  • 1/3 c oil
  • 1/3-1/2 c soy milk
  • 1/2 tsp vanilla (pod or extract)
  • 2 c fresh blueberries
  • Cinnamon+brown sugar mix for sprinkling

  • Since I like using wholegrain and non refined products, I grind my flour and also use the same method with my sugar to receive a more industrial like smooth texture for baking. My blender is thermomix
  • Create flax egg by combining flax meal and hot water; let gel
  • Mix flour, sugar, baking powder, and salt in main mixing bowl
  • Add oil, milk, and vanilla to flax egg and whisk
  • Add liquid to dry ingredients and gently stir manually e.g. with a fork (don’t beat!)
  • Fold in blueberries
  • Get muffin sheet ready by either lining with cute paper cups or greasing silicon or metal forms
  • Fill dough into forms (optional:) and sprinkle with crocant Change
  • Into 205°C oven for 20-22min or if smaller forms used reduce time to perhaps 15min
  • If on two baking sheets, I recommend hot air oven at 180°C for 19-20min
  • Let cool a bit before presenting them to eat. Taste good warm as well as cold
  • Ready to eat !!!
