  • 1 Baby Gem Lettuce
  • 1/4 Cucumber
  • 1/2 Small Red Onion
  • 1 Egg Cup Red And White Quinoa
  • 1 Carrot
  • 1 Handfull Spinich
  • 1 Handfull Rocket
  • Red Amaranth (For Garnish, Any Edible Flower Will Do, I Just Like The Colour Of Amaranth)
  • Pea Shoots (For Garnish, Lambs Lettuce Works Also)
  • 3 Slices Chorizo (I Prefer Pre Sliced As Usally A lower Fat Content, But Good Quality Essential)
  • 3 Slices Chicken (Use Leftovers Or Grilled If Avalible But I Like To Poach In Garlic And Tarragon)

  • Boil Your Quinoa The Day Before And Keep In Fridge. Ratio Of 1.1 Grain To Water
  • Cut All Your Veg And Seperate For Ease When Plating. Baby Gem: Roughly Chop. Cucumber: De-Seed (Cut Legnthways Then Run A Spoon Down The Centre) Then Dice. Onion: Dice Carrot: Ribbon (I Use A Peeler Then Cut Legnthways) 5/6 Will Do
  • Mix Onion, Cucumber, Spinich, Baby Gem, Rocket And Quinoa Together. Mix Gently With Clean, Dry Hands Or With Gloves To Keep The Integerity Of the Ingredients.
  • Place A Good Handfull Of The Salad In Your Bowl/Plate. Roll The Chorizo Slices And Place On Top With The Chicken In A Six Point Star Formation.
  • Arrange The Carrot Ribbons Off Centre In A Zig-Zag Formation.
  • Put A Good Pinch Off Pea Shoots In Centre. Tight And High. Sprinkle Over The Amaranth.
  • Serve With Your Favourite Dressing/Glaze. My Preference Is A Hot Mustard Vinegerete.

    Ingredients

  • 2 Blackbeauty Egg Plants sliced 1/2" thick
  • 1/4 cup olive oil
  • 1 Medium sliced onion
  • 2 sliced green chillies
  • 10 cloves garlic smashed
  • 1 Medium Tomato
  • 2 Table spoon Tikka Masala
  • 1 Fresh Scallion
  • Steps

  • Heat oil in a Pan. Add Garlic. Cook 1 minute. Add Onion, cook 3 minutes covered. Add Green Chillies and Eggplant. Mix it gently. Add Tikka Masala and Tomato sliced. Mix again and cook on low heat. About 20 mts. Add chopped Scallion and serve hot.

    Ingredients

  • 4 large size green apples, peeled and shredded
  • 2 eggs
  • 1 cup yogurt
  • 1/2 cup ricotta cheese
  • 1/2 cup milk
  • 1/2 cup all purpose flour
  • 2 tbsp almond flour
  • Juice of 1 lemon
  • 1 tsp baking powder
  • 5 drops Lemon essential oil (I use doTERRA)
  • 1 tsp vanilla extract
  • Steps

  • Combine eggs, yogurt, milk, ricotta cheese and eggs. Blend together with a wisk.
  • Combine all dry ingredients, add to blended wet ingredients. Mix well.
  • Add lemon juice, lemon oil and vanilla extract. Mix well. Let stay for 10 minutes. Add shredded apples, mix well.
  • Preheat frying pan on medium high. Spray with avocado oil (or grapeseed oil).
  • Place spoonfuls of mixture on a frying pan leaving some space between pancakes and fry on both sides until fully cooked. I prefer to keep frying pan covered with lid on.
  • Serve with sour cream and your favorite jam or honey.
  • Simple Fried Green Tomato's

  • The Essentials
  • 3/4 cup Vegetable Oil
  • 2 medium Fresh Green Tomatoes
  • 2 Eggs, Whisked in bowl
  • 1 1/2 cup White Corn Meal
  • 1 tbsp Salt
  • 1 tsp Ground Pepper
  • 1/2 tbsp Garlic Powder
  • 2 tbsp Lemon & Pepper Seasoning
  • 1 dash Oregano
  • 1 tbsp Italian Seasoning
  • Steps

  • Pour Vegetable Oil into medium sized skillet and heat until the oil starts forming small bubbles. **You can also make these on a stand alone skillet. Preheat to 350°F and add vegetable oil and follow steps below**
  • Slice the Tomato into 1/4 inch slices
  • Mix the White Corn Meal and other dry ingredients in a medium bowl
  • Dip the tomoato slices in the whisked egg. Then coat each tomato slice with the dry mixture.
  • Turn the heat on the skillet down to medium and place tomato slices into skillet.
  • Fry for approx 4 minutes per side, or until golden brown.
  • Repeat steps 4-6 until tomatoes are all fried. Enjoy!
  • Fluffy Pancakes

    Ingredients

    1-2 persons

  • 3/4 cup flour
  • 2 tea spoons baking powder
  • 1/2 tea spoon salt
  • 1 egg
  • 1 tea spoon Essential vanilla
  • 3 table spoon butter
  • Honey
  • Steps

  • Mix the dry ingredients separately
  • Egg in a small bowl, add the essential vanilla and the melted butter
  • Mix them well
  • Add liquid ingredients to the dry ones and mix them to make it homogeneous, as not to mix much to make the pancakes soft n fluffy
  • Put a little of butter in a frier and add the pancake dough and spread to make the size u want
  • Check the down face if it gets ready by a spatula, then flip it to the other side
  • Repeat the same for the other pancakes
