Salmon With Soy Sichuan Sauce

1 salmon head or any fish
15 dried Chili
2 tbsp Of oil
1 tbsp Of dried Sichuan pepper corn
4 tbsp light soy sauce
1 tbsp dark soy sauce
3 tbsp Of sugar
5 tbsp Of water
4 tbsp dice sour vegetables
Baked salmon 200 c for 20 to 25 minutes depending on the thickness of the salmon then set aside
With oil pan fry the dried Chili, dried Sichuan pepper corn for 2 minutes Change
Add in the garlic and onion and stir fry for another 2 minutes Change
Add in the sauce and mix well, add in the water then add in the sugar together with the dice sour mustard and mix well for another 2 minutes Change Change
Thicken the sauce with the cornstarch mixture and mix well for another 1 minutes then off heat and enjoy this sauce with salmon Change Change
BBQ Lime Ranch Salmon

1 salmon fillet (any size, but 1 pound will feed 3 to 4 people. Mine was 1.5 today.)
1 green onion, finely chopped
Preheat oven to 450F and lightly season salmon with salt and onion powder. Remember that the thicker portion requires a bit more salt than the belly and also that the much thinner belly part needs very little salt because it is so thin. That said, not all salmon fillets come with the belly and are much more uniform in thickness overall. Change Change Change
Spread fillet with Ranch dressing. (For 1.5 pounds, I used about 3 Tablespoons.) Change Change
Then spread fillet with BBQ sauce in the same quantity as Ranch dressing. Change Change Change
Squeeze the juice of half a lime over the entire fillet and sprinkle with green onions. Change Change Change
Roast in oven for 18 to 20 minutes. Change Change Change

Salmon pad thai

For the salmon
3 8-10 oz salmon portions, skin on
2 tbsp oil
Sea salt and white pepper
Chile lime seasoning
Paprika and a touch of cayenne pepper
For the pad thai
1 pkg wide rice noodles
2 tbsp olive oil
3 tbsp fish sauce
1 tbsp soy sauce
1/2 tbsp rice vinegar
2 tbsp brown sugar
Juice of half a lime
1/2 cup chopped cilantro
1 bunch scallions, sliced on the bias. Not the bulbs
Soak rice noodles in warm water for 35-45 minutes.
Place salmon portions on a plate and cover well with the seasonings for the salmon. Let sit until noodles are ready to cook.
When ready, heat 2 large frying pans over medium high heat. Add oil to both pans when hot.
In one pan, add noodles, fish sauce, soy sauce, and vinegar. You may need to add up to a 1/4 additional water to get noodles tender. Add water after noodles are well coated with the other ingredients.
In the other pan, place salmon skin side down. Fry until skin starts to become crispy and lightly browned. This should take 7-9 minutes.
As noodles start to get tender, add the rest of the ingredients for the pad thai. Saute until noodles are well coated and the moisture turns to a glaze.
Flip salmon over and saute for about 4 more minutes. Careful of the thickness of the salmon I used a thick cut of king salmon. If yours is thinner it probably will need less time. Do not dry the fish out.
Plate noodles and garnish with cilantro, scallions, and peanuts. Squeeze more fresh lime juice over the top. Plate salmon on top of the noodles. Serve immediately. Enjoy.
