Crockpot Eggplant 🍆Caponata

  • 2 eggplants, peeled, cut into chunks
  • 2 onions, sliced
  • 10 cloves garlic, minced
  • 1 can condensed cream of mushroom soup
  • 1 can condensed tomato soup
  • 1 can (14.5 ounce) diced tomatoes
  • 3 heaping tablespoons stuffed spanish olives(with some juice from the olive jar)
  • 1 tablespoon oregano
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper
  • 2 tablespoons balsamic vinegar
  • 1 can (6 ounce) tomato paste
  • Parmesan cheese

  • Place your peeled and cut up eggplant and sliced onions inside a crockpot…… Change Change
  • Now add your minced garlic….. Change Change
  • Next add your cream of mushroom soup, tomato soup and diced tomatoes, mix lightly…… Change Change Change
  • Now add your spanish olives, oregano and black pepper, mix lightly…… Change Change Change
  • Next add the crushed red pepper,balsamic vinegar and tomato paste, mix all well…. Change Change Change
  • Cook on Low for 8 hours, stirring lightly once every 2 hours if possible, if you can’t, don’t worry about it !!!! Change Change Change
  • Serve over pasta of your choice topped with Parmesan cheese and enjoy !!! Change

  • 3 cloves (10 grams) Garlic
  • 1 piece (30 grams) Onion
  • 175 grams Ground Pork
  • 2 pieces (200 grams) Eggplant
  • 2 pieces Egg
  • 1/2 cup Oil
  • Iodized Salt
  • Ground Black Pepper
  • Steps

    30 minutes

  • Prepare the eggplant: Wash the eggplant in running water and dry. Get a fork and poke holes on the eggplant. Broil it in the oven until the skin turns brown and meat is soft. Peel off the skin (be careful as it very hot). Mash it a little bit using a fork until it flattens. Set aside. homebasedchef Change Change Change
  • Cook the meat filling: Heat oil in the skillet or pan. Sauté the chopped garlic and red onion. Add in the ground pork and continue sautéing. Season with salt and pepper. Continue to cook until the pork turns light in color. Set aside. Change Change Change
  • Prepare the egg mixture: Beat 1 egg in a bowl. Season with salt and pepper. Add in the eggplant and mix with the egg in a mashing motion. Make sure to spread the eggplant to make space for the ground pork. Add the cooked pork on top and mix in the egg. Change Change Change
  • Fry the omelette: Heat oil in the skillet or pan. Hold the stem of the eggplant on one hand and hold the bowl/plate in the other hand. Slide the eggplant mixture into the pan carefully to maintain its form. Fry the omelette thoroughly on both sides. Change Change Change
  • Repeat steps #3 and 4 for the remaining eggplant.

  • 1 x-large eggplant of 2 medium ones sliced into thin rounds
  • 3 eggs scrambled. 2 for eggplant dip and 1 for meat mixture
  • Italian bread crumbs
  • 2 lbs ground turkey seasoned with S&P, browned, drained, and cooled
  • 2 lbs low fat ricotta
  • 1/2 cup Parmesan cheese
  • 1 quart homemade pasta sauce
  • 2 cups low fat mozzarella shredded
  • 1 handful fresh basil, 1 tsp dried oregano, and Parmesan cheese if you want
  • Salt and pepper ingredients as you go

  • Brown the 2 lbs of ground turkey with S&P, and drain. Cool then add ricotta, 1 scrambled egg, and about 1/3 of the pasta sauce. Add herbs and Parmesan cheese Change
  • Cook egg dipped and breaded eggplant on greased sheet for 25 min. You should have 3 pan fills of eggplant to layer once done. Bake eggplant on 425 until golden.
  • Layer eggplant, ricotta mixture, a little sauce and continue to layer. You should have 3 eggplant layers and 2 ricotta layers. Change
  • Top with mozzarella cheese and bake for 1 hour at 375. Enjoy! Change

  • 1 large eggplant
  • 2 tomatoes
  • 2 cucumbers
  • 1 red onion
  • 2 cups color peppers
  • Cup fresh parsely
  • 1/2 cup fresh pomegranate
  • 1/2 teaspoon salt
  • Oil for frying
  • Dressing
  • 1/4 cup ketchup
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon HP steak sauce
  • 1 tablespoon fresh lemon juice
  • 2 tablespoon Virgin olive oil
  • 1/2 teaspoon salt or more

  • To get rid of the bitter part of eggplant first peel some line not all of it and then do cut it slice bite size put them in colander sprinkle them lightly 1/2 teaspoon salt let them set about 15 minutes
  • Wash eggplant from the salt dry in paper towels and deep fry till crispy let them drain on paper towel
  • You could fried the onions but I like them fresh and crispy add all the vegetables
  • Mix all ingredients of the dressing add on top of the vegetables when you ready to eat

  • Now take a wok add oil nd heat it now add onion fry it add tomato fry it now add salt nd red chilli powder mix it lastly add brinjal nd mix well
